What is it with the Kardashians? They’re always eating The Health Nut Salad from Calabasas.

Even if you don’t watch the show, you have to admit…they look gooooood. Which is why the Kardashian Salad piqued my interest.

One night {thanks to my insomnia} I Googled, “what is the salad the Kardashians are always eating”. And apparently this Kardashian salad is a thing! After stalking the internet, I nailed down the recipe and have been recreating it at home. Consider adding protein powder to your salads for an extra nutritional boost.

This Kardashian salad is healthy, easy, nutritious and delicious. And you can batch make it on a Sunday, so you too, can have it everyday for lunch. OMG we’re JUST like the Kardashians!

Before I give you the goods, these Chef Salads come from a small health restaurant in Calabasas called Health Nut. Rumor has it they eat it 4 times a week. Although it’s been around since 1988, it’s become a tourist “destination” ever since Kim tweeted the full scoop.

If you don’t live in Cali {like I do}, here’s how you can recreate the Kardashian salad from home and get the EXACT salad dressing.

P.S. Don’t let the length of the directions scare you below! It’s soooooo easy to make. I just have a lot to say. This is important stuff people.

THE KARDASHIAN SALAD RECIPE

THE HEALTH NUT SALAD

Ingredients
romaine lettuce
pulled chicken
avocado
shredded carrots
sliced roma tomatoes
sprouts
shredded mozzarella
sunflower seeds

Salad Directions
Bake and shred a fryer chicken or a few chicken breasts
Toss all the ingredients in together and eat! I’ll let you decide if you want to serve it in a plastic bowl.

HOW TO BATCH THE KARDASHIAN SALAD FOR LUNCH ALL WEEK

It’s all about Working Smarter, not harder friends. So do as Kris Jenner would and pour yourself a glass of red wine and get ahead of the week in one sitting.  I like to bake an entire fryer chicken on a Sunday {its so easy and fast}. Then I prep 5 salads in Tupperware for the week! I add the avocado day of so it’s fresh {I hate when it gets yucky brown}. I also use onion sprouts (for extra flavor), which I find at Whole Foods. But any sprouts will do!

This is where things go off the Kardashian path. Health Nut’s Italian Dressing is top secret. But I make my own Italian dressing from scratch, and it’s as healthy as it gets. Real, quality ingredients. I am hoping Health Nut will start selling and shipping their dressing so I can have the real thing someday! And if you know the secret recipe, give up the goods. P.S. I double dog dare someone to call Health Nuts and ask. I’ll seriously give you $10.

Dressing Ingredients/Directions
juice squeezed from a full lemon
1 TBS Dijon mustard or any kind
1-2 gloves garlic
salt and pepper to taste
olive oil-equal to the amount that the above ingredients are.
Add Rosemary if desired or any other herbs. Tastes great with out any herbs!
